Oh, So Thankful

Aug 29, 2024 | 28 comments

I’m just cooling my fur on these sweet schiste stones..

Oh, so many thanks to you, dear readers, for so many things and events and friends and kitties and doggies and birdbrained those darling birdies that make our mornings such fun….especially mine, haha. They have no idea what’s going on when I’m floating around them,,,

Thank you all for all that you do for animals who needed forever homes and good hearts to care for them.

Lovely sunny day here but summer’s end is sneaking in with cooler nights and mama is such a summer person. She is trying to adjust…

Maybe I’ll get those tomatoes to grow a bit faster to ease her into autumn.

But our sweet neighbor just gave us this from his bounty!

Don’t think we’ll starve…

Mama made sauce for winter and eggplant lasagne and baba ganoosh and we’ll STILL trying to figure out more recipes for eggplant! All welcome.

Well, I thought I had commented but it looks like it got lost in the ether. So, let’s try again. LouLou, you have a darling tummy. Here is my eggplant recipe: Take a whole eggplant, and poke holes in it then bake it for up to an hour. Let it cool, then peel it and mash it. Saute in olive oil with chopped garlic and tomato. Take a lightly beaten egg and throw it in and stir in until everything is cooked. The egg is optional, it does hold everything together nicely though. We eat it over rice, or as a dip with pita chips or spread on a nice slice of french bread. It is a Persian dish that is called Meerza.

Baba ghanoush is EXCELLENT on roasted sweet potatoes, Angel Loulou.
There is a blend of flavors that is out of this world.

My Mom’s “guilty pleasure” is fried eggplant…..not good for her probably but she loves it and maybe once or twice at most a year she gives into the NEED to fry!!! LOL

How about and Asian spicy eggplant? I’m sure you can find recipes online. What a joy when neighbors share their bounty, right?

What a cute tum you have LouLou! We have an eggplant recipe called Meerza: Put some fork holes in the eggplant, then throw the whole thing into the oven around 350 degrees. Bake for around an hour (for a large one), let it cool then peel it. Mush it all up and put it in a pan with olive oil, garlic and a little tomato, salt & pepper, saute then stir in a lightly beaten egg to hold it all together and saute until the egg is cooked. We eat it over rice or as a dip with some pita chips.

Love the picture of you on the warm stones. Love the tomato pictures too. Regarding your comment to us, comments get tricky sometimes. Ours don’t always get through either. It comes and goes sometimes. We don’t understand it either.
