
Too much pizza…a satisfied selfie.
Donc, mama and papa have just visited the Hokusai exhibit here in Rome and oh, boy, was that a treat for me…even kitties in his woodcuts and everything so precise and amazing. What an artist. But the fun part is the roon with videos of his famous ‘WAVE’, which you can enter and feel that your body is actually part of the water and sea and the giant wave!

I sidestepped that one…he understands who understands, a phrase in Italian that about covers it.
Happy Sunday to all…brilliant sun here, which papa is seeing with new eyes, and a grandkid’s soccer match later on and then the search for good pizza. Even Italians are complaining about the lack of….
Mama is getting some dough ready, just in case.
2 cups water
1 package dry yeast
1 teaspoon salt
4 cups all-purpose flour
Mix it all up into a smooth ball and place in olive-oiled bowl to rise.
Stretch out risen dough on oiled sheet pan and roll or stretch very thin..
Place somewhere warm to rise just a little while you assemble tomato sauce, mozzarella (preferably fresh), fresh basil, and for us, anchovies to put on top of the tomato sauce.
Heat oven to highest temp.
Spread the tomato sauce thin, do not pile it on, distribute 6 or 8 anchovies on top and bake for 6-7 minutes until edges are browned. Then add the cheese and bake again for 3-4 minutes.
Adding the cheese after the pizza is on its way will keep the cheese from turning to rubber!
Remove from oven when all edges are browne well and cheese is melted.
Decorate with fresh basil leaves, if you have them.
You may also bake in a round pan if you wish.
