Bonjour, today along with my contribution to Saturday’s blog, mama is posting her spinach balls, so good to eat and so good for you and so easy with spring’s fresh spinach (or swiss chard, too).

Spinach balls with olive oil, lemon juice and fresh pepper sprinkled over them are a lovely fresh treat along with luch or dinner.
1 pound of fresh spinach, wilted in a little salted water and drained really well in a colander…no liquid left. Save spinach water for soups. And give Popeye a run for his money, haha.
SPINACH BALLSL
1 small sweet onion, chopped very fine
A squeeze of lemon
Salt to taste and a grate of nutmeg
Olive oil, lemon and pepper
Chop the cooked spinach very fine or pulse in the bowl of a food processor with all the other ingredients. With clean hands, form small portions of the mix into balls and place on a serving plate. Dress with a sprinkling of olive oil, a squeeze of lemon and a little fresh pepper. Chill or serve room temp, they are good either way.

Oui, around mama’s kitchen spinach rocks….also ggod steamed, mixed with a little cream and butter (!) and a poached egg on top.

Yes, frozen spinach is fine. Works wonders.

My Mom says thanks for the recipe – she loves spinach (and the drawing of the woman-eating colander!!)…….We are waiting for Spring to STAY – it comes and goes but at least we know it’s trying!
