Cinco de Mayo today. Get out your Sombrero and eat some Mexican delights! Mama’s guacamole:
2 ripe avocados
1 small sweet onion, chopped fine or grated
1 garlic clove, chopped fine
Juice of 2 limes (or lemons if you don’t have limes)
Small bunch of fresh cilantro, chopped fine
Salt and pepper
Pinch of hot pepper or dash of Tabasco if you like a bit more spiciness
In a mixing bowl, mash all together well until fairly smooth, or put everything in the bowl of a food processor and pulse until blended.
Eat with tostaditos, salsa verde and a cold beer!
Salsa verde:
In the bowl of a food processor place 2 large tomatoes, 1 large sweet onion, 3 garlic cloves, 2 small semi-hot or sweet chile peppers (canned or not), dash of red wine vinegar, salt and pepper, pinch of sugar, and handful of fresh cilantro and pulse until saucy.

Ole! from Serena (who doesn’t like chiles) and our new drop-in or dumped-out or whatever cat, Tar Baby. He’s not a resident, any more than Drudge is, but they both THINK they’re going to be permanent residents. Serena seems just to like the company of beta cats…she never seemed really attached to Pastel, but she loved Silver, and I loved them both.
Sometimes I think it’s good to let an irreplaceable pet’s place be filled in by a strictly temporary one. No need to try to bond, just put out food and look for a new place for each of the little tomcats and hope to find another junior cat who won’t mind being bossed about by Serena. I don’t think of Serena as an old cat, she’s still bouncy and mischievous, but she is eight years old!
Love this story! And yes, mama now has the visiting Rasta who adores being snuggled an then goes on his way, but mama feel guilty about feeding him. His real mama is just up the street! Still, he chose our house to lounge around in. Probably feels my illustrious presence watching over things….

Well, my mama and papa did not DO Cinco either…but they did have a little guacamole, which is never turned down around here.
