Socca To Me

NO, NOT SOCCER.  SOCCA!!!

Well, mama is still mad about this giant pancake called socca and so she went to the source at Chez Pipo in Nice and watched the expert socca maker do his thing.  First a big copper pan, then olive oil smeared over the surface, then batter poured into the pan and tilted around to cover the surface, then the socca popped into 400C which is like an American oven that will heat to over 700 degrees, which does not exist, then a 12-15 minute wait while the expert turns the pan around a couple of times for it to cook evenly in the wood oven, then out it comes all brown and bubbly and fragrant with olive oil.  It is then cut into serving shards and served with a glass of cold rosé.

I think mama is addicted.

Enough addicted to make me put this recipe in the blog:

1 cup chickpea flour

1/2 teaspoon salt

1 1/4 cups tepid water or whatever it takes to mix the flour into a nice, creamy batter, not too thick, sort of like the consistency of cream

2 tablespoons olive oil

Mix those ingredients all together and let sit for half an hour for the flour to absorb the water and oil.

Put an oven rack about a third of the distance between broiler and bottom of oven.

Turn up your oven to its hottest temperature and also the broiler, and when they are up to temperature, put 2 more tablespoons of oil in a shallow heatproof metal pan or skillet.

Put the pan in the oven for a few minutes to get really hot, then pour in the batter just to cover the bottom of the pan.  Return it to the oven and let cook about 10 minutes or until crispy around the edges and nicely browned on top.  Cut the pancake into haphazard pieces, sprinkle with pepper and eat while hot.  Even I love socca!!!

Looks like a giant pizza without toppings. Only different. Hard to believe those are the only ingredients and you eat the pancake without syrup. Do humans really eat it with salad? Is it more of a bread than a pancake?

We hope Precious still has a lot of good days ahead of her. We always hate to hear any furry is ill. You had better stay healthy!
