Whoopie! Jumping for joy today!

Donc, lots of thanks today. For the summer being so lovely, even if hot, for friends everywhere who are so special and dear to us, for kids having time away from their work to kick back and watch elephants (mama is so jealous…she LOVES elephants), for having the garden cleaned up finally and all the pigeon-poo off the patio…sounds like a good song title, haha.

Thankful always for our blogging world, one of the only things that feels sane on some days….

Thankful for banana bread in the oven and smelling WONDERFUL. New recipe:

Breakfast Banana Bread

2 soft bananas

1 cup of whole wheat flour

1/4 cup olive oil (or melted butter if you wish)

1/2 cup honey

3/4 cup of bran or oats or oat flakes

1/4 cup crushed nuts

1 egg

1 teaspoon baking powder

1/2 teaspoon baking soda

2 pinches of cinnamon

Pinch of salt

A little yogurt to bind the whole mixture

Heat the oven to  350F or 185C.

Mix everything up together, mashing the bananas and stirring vigorously to mix. Sometimes I do it in the food processor.

Butter a bread pan liberally or two small ones and pour in the mixture halfway up. Bake 25-30 minutes until nicely brown and risen and firm to the touch.
