
Uh, oh, I smell CORNBREAD!!!
Well, mama just made cornbread for her stuffing but has no bird in which to stuff it!!! She’ll be out looking for something later today but for two peeps, all that is needed is a little chicken. We’ll see. The turkeys around here are BEEEEG!
Wait a minute…are they taking care of this up here in the clouds. Better check on that…
If you would like some cornbread just to eat with butter to feel Thanksgiving-y, this is what mama did:
1 cup cornmeal
1 cup flour
1 tablespoon baking powder
1 teaspoon chile powder
1/2 teaspoon salt
1/2 cup corn niblets
4 tablespoons melted butter
1 egg
1 generous cup of milk
1/4 cup Greek yogurt
Sprinkling of sweet paprika for color
Heat oven to 350F/175C
In a mixing bowl, put the dry ingredients and corn. Beat the egg with the liquids including the butter and barely mix into the dry ingredients, moistening all but do not overstir. Pour into well-oiled or buttered small bread pans or any pan you like, sprinkle with sweet paprika, and bake for 30 minutes.
Mama uses her cornbread to make stuffing, so she likes it well-baked to handle the onions, celery, almonds, sage, etc in the stuffing mix.

We just do turkey breast, now there are so few of us. As for the stuffing/dressing, it gets cooked on the side with plenty of the stock from the giblets to moisten it and give it flavor.
We wanted to do that but could’t find the piece of turkey so used a chickie.
Mmmm…now I want some cornbread…and turkey!
Well, that cornbread is awfully good, but pretty rich is you use butter instead of olive oil. Mama’s mama did….
YUMMMM! That looks so good why not just shape it in the form of a turkey and have THAT for Thanksgiving?! HAHAHA Just kidding but we know about BIG turkeys…Mom and Dad dug through the grocery store pile of turkeys to find a petite 5 pounder which will be perfect for tomorrow. May we wish everyone (especially you all) a wonderful Thanksgiving – we are SO THANKFUL to know you!

Cornbread is wonderful ! And a genuine American Thanksgiving dish (though not necessarily the “first” Thanksgiving). Corn was domesticated over here in the “New World”.
So love your info, Ms Mary! And we love corn lore! Not much on the cob in France but Italy is now growing more for humans, not pigs or polenta.

Well, mama’s mama made it and then let it sit out for a day before she used it for stuffing. It’s awfully good as is!
