Well, when mama makes soup, it’s not just a little taste as the title of this blog implies.

She puts everything but the kitchen sink in some of her winter soups, but since it’s not anywhere near winter yet (I cross my paws!), she decided today to make three different cold soups to finish out the summer and once again, I’m in there cookin’…

One is green, one is red, and one is orange:

For the green one, just simmer 2 cups of peas or fava beans with a small onion, a vegetable or chicken bouillon cube and some pepper in water to cover .  When the peas are very soft, squeeze in some lemon and add a few leaves of fresh mint or basil.  Whiz it all up and put it through a sieve.  Let cool, chill, and serve with a spoon of yogurt on top.

For the red soup, make gazpacho. Mama puts 6 medium ripe tomatoes in her food processor.  Then she adds half of one of those really long cucumbers, a clove of garlic, a small sweet onion, a handful of cilantro, a handful of grilled almonds, some olive oil, some pepper and lime juice and then she whizzes that all up and serves it as is, or put through a sieve to make a fine-textured soup.  Chill and serve with chopped avocado (like the beet soup a few blogs back) or croutons.

For the orange soup, simmer in enough water to cover 2 cups chopped carrots, a sweet orange pepper, grilled and peeled, a small sweet onion, a pinch of cinnamon, a pinch of curry powder, and a bouillon cube. When all are tender, whiz it up in the food processor with a little yogurt and let chill.  Serve with chopped fresh basil on top, or crushed grilled almonds.

Now, I, personally, do not drink or slurp mama’s soups, but I do have carrots in my food and peas (but not the beets…) and string beans and all sorts of vegetables that those kitty food people put in our food now for good health, but I think if mama put out a little bowl of that carrot soup, I could go for it.

I wonder if the Dutch eat a lot of orange food?  That’s their national color after all.  They originated Edam cheese and it’s orange, but are there other things I don’t know about?  So many questions…

Orange is mama’s favourite color but when she looks at me with that funny gleam in her eye and I see that she’s reading a magazine that has at those punk hairdos that are…well…often orange…I’m outta here!

And if carrots turn your skin orange, imagine what they’d do to my white FRONT!!! I’d look like Halloween!

Maybe I’ll stick with the pea soup…
